About

Led by chef Pancho Ibáñez, former Chef de Cuisine of Pujol in Mexico City, Bistro 8 is a new Mexican Modern restaurant on Miami’s famed Calle Ocho. Opened in January 2025 by Shōwa Hospitality (the team behind Miami’s celebrated omakase, Hiden), the restaurant aims to elevate Mexican cuisine with a modern, sophisticated approach. Ibáñez, originating from Xalapa in Veracruz, brings a wealth of experience from various Mexican hospitality brands. His menu highlights traditional Mexican flavors reimagined with a modern touch, prioritizing the use of high-quality ingredients and approachable refinement—embodying the philosophy “simple pero ni sencillo” (Simple but not easy).

The design of Bistro 8 was crafted by Minoru Oyamatsu of Oyamatsu Design Studio Inc. from Tokyo. The 1,700-square-foot space seats 40 diners and features a bright, colorful, airy ambiance. With 10 bar seats and a sound system built by Kazunori Taguchi of Taguchi Craft in Japan, with speakers made from Arctic birch trees aged between 70 and 160 years, Bistro 8 offers a lively dining experience that matches the energy of the vibrant Calle Ocho.

The Space

The design of Bistro 8 was crafted by Minoru Oyamatsu of Oyamatsu Design Studio Inc. from Tokyo. The 1,700-square-foot space seats 40 diners and features a bright, colorful, airy ambiance. With 10 bar seats and a sound system built by Kazunori Taguchi of Taguchi Craft in Japan, with speakers made from Arctic birch trees aged between 70 and 160 years, Bistro 8 offers a lively dining experience that matches the energy of the vibrant Calle Ocho.
